In recent years, the World Organisation for Animal Health (OIE) has given high priority to food safety and it is therefore timely to devote an issue of the Review to animal production food safety. In view of the increasing globalisation of trade in foods of animal origin, the subject has been examined in the context of global markets. Animal production systems in the industrialised world are changing dramatically with respect to location, herd size and specialisation. The focus on food safety promotes systems with a higher degree of biosecurity, often associated with an increase in herd size and self-containment. The globalisation of agricultural trade and increased competition also favour an increase in herd size and specialisation. These trends also lead to some regions with livestock-dense areas, giving rise to environmental concerns.
