Summary :

Recognising that food safety is a vital public health issue for all countries and their consumers and also a matter of growing importance for international trade in foods of animal origin, the World Organisation for Animal Health (OIE) identified it as a high priority area in its Strategic Plan for 2001-2005. The organisation has been much more active in the food safety area in recent years: one manifestation of this was the establishment in 2002 of a permanent OIE Working Group on Animal Production Food Safety to coordinate its activities on food safety, focusing on measures applicable at the farm level. In addition, the Working Group promotes collaboration between the OIE, the Food and Agriculture Organization (FAO), the World Health Organization (WHO) and the Codex Alimentarius Commission (Codex). The latter, like the OIE, is specifically recognised as an international standard-setting organisation in the World Trade Organization’s Agreement on the Application of Sanitary and Phytosanitary Measures (the SPS Agreement). The publication of this special issue of the OIE Scientific and Technical Review devoted to animal production food safety challenges in global markets and how these challenges can best be met is another example of the OIE’s focus on food safety issues.
